Production area: Cartizze, Valdobbiadene, Veneto. The Cartizze area is a particularly precious hilly area within the Municipality of Valdobbiadene, a real Grand Cru.
Vinification technique: he first fermentation of the grape must is carried out at controlled temperature and with selected yeasts. Then we proceed with the second fermentation, lasts 25 – 30 days. After a period of maturation in the autoclave, the wine is bottled.

Maturation and Aging: from 1 to 3 months in an autoclave.

The winery

The Bortolomiol winery was founded in Valdobbiadene in 1760 and represents one of the few wine cellars left over the years of strictly family ownership. Giuliano Bortolomiol took care, after the Second World War, to restore the destroyed and abandoned vineyards with the aim of bringing Prosecco from a local product to an internationally recognized sparkling wine (and today with the recognition of the DOCG in 2009, it can be said that his dream has come true). Giuliano was also a master in the application of the Martinotti-Charmat method, and as an intuitive and great experimenter he first created Prosecco brut. Today the company is in the hands of Giuliano’s four daughters, always careful to respect those principles of product quality and enhancement of the territory that have always characterized Bortolomiol’s vision. The company owns five hectares, where the greater space is reserved for the Glera grape.

The wine

The Valdobbiadene Prosecco Superiore di Cartizze Dry Millesimato 2018 wine has a clarity that we can define as brilliant given by the presence of carbon dioxide. The color and reflections are straw yellow. The foam is evanescent with very fine, numerous and persistent bubbles. The nose is rather intense, of medium complexity: the bouquet is characterized by several aromatic families, dominating the notes of fresh fruit reminiscent of the banana accompanied by a floral note of acacia and a slight hint of toasted hazelnut. The entry into the mouth is intense, sweet, fresh, with a good flavor. Valdobbiadene Prosecco Superiore di Cartizze Dry Millesimato is a balanced wine with an average persistence, if drunk in the short term, it finds its best expression.

Food matches: Given the high sugar content (between 17 and 32 g / l.) It is recommended to combine this wine by concordance using sweetness as a parameter. Perfect with dry pastries, fruit tarts and desserts.
