Vinification technique: The maceration and alcoholic fermentation take place in steel. The duration of the maceration is variable while the alcoholic fermentation takes place at a controlled temperature between 22 ° – 26 ° C for 15 days.
Maturation and Aging: 4 months in steel tanks on the fine lees.

The Cantoni Astroni are a unique testimony of the “metropolitan” viticulture of Naples. The project came to life by the will of the Varchetta family in 1891.
