The Winery

Bodegas Tradición’s origins begin with “Bodega CZ, JM Rivero”, the oldest of the sherry-producing companies, already active in 1650. In 1998 Bodegas was purchased by three entrepreneurs, all with a family history related to sherry: Joaquin Rivero, Ignacio Lopez de Carrizosa and Javier Domecq. About 20,000 bottles are produced per year, of which 80% is destined for export. The filtration of their wines is reduced to a minimum in respect of the traditional styles of Jerez. The Bodega also houses the Rivero family art collection which includes about 300 fabulous works of Spanish art from the 15th to the 19th century and a 19th century photographic exhibition that tells the story of the Jerez wine.

The Wine

Sherry Fino Tradición wine is clear. The color is an amber yellow with golden reflections. The nose is intense, rather complex, the bouquet ranges from oxidative notes to toasted notes of almond and butter. The entry into the mouth is intense, dry and soft, with a slight freshness and good sapidity. Since Sherry Fino Tradición is not subjected to any type of filtration, it is a full-bodied wine which, thanks to its aromatic intensity and long persistence, can be defined as harmonious and balanced.

Foods in pairing

To be combined with first and second courses based on seafood such as spaghetti allo scoglio and frutti di mare alla marinara. Excellent after a meal in the company of a blue-veined hard cheese such as gorgonzola.
